The sourwood, on the other hand, was quite thick. It tasted strongly floral, with an herbal edge, and had a light, easily pourable body. I poured a little of each honey into a spoon. The seal was reminiscent of a bottle of wine, suiting the beauty of the bottle. I was excited to compare it with the sourwood. It’s the soprano of honey, high and sweet and ringingly clear. Tupelo is one of my favorite varieties of honey. I received two extraordinarily elegant flutes of honey, one of sourwood and one of tupelo.
